February Munchkin Meals: Healthy Toddler Meal and Snack Ideas

One of the reasons that I started blogging was to share healthy recipes for kids (starting with baby led weaning and evolving to toddler meals as my son has grown). 

That's also one area of this blog that I haven't been giving quite as much attention to lately. Well, today, it's time for Brittany's monthly Munchkin Meals link up over at A Healthy Slice of Life


I'm giving you guys a look into the types of foods Mr. Toddler has been loving lately! The types of meals that have made my life way easier, and most importantly, the types of meals that leave my heart content knowing that I'm doing my best to provide a varied and healthy variety of foods for my kiddo! That being said, not every meal is loaded with 200 vegetables, although I do try!

Note: I try to keep my meals paleo pretty much all of the time. For my son, I do try to provide as many paleo meals as possible throughout the day. He also gets healthy non-paleo foods though, as well as good quality dairy. 

Breakfasts


Breakfast is pretty much the most difficult meal of day for me to prepare. I go for quick and easy meals like these: 

Toast with a pan fried egg and some lightly pan fried spinach. Quick and easy!

Roasted sweet potatoes with eggs and spinach yet again. Eggs and spinach are kind of a go to.

Mr. Toddler's other breakfast time favourite is oatmeal. 

Lunches 


The little man has been obsessed with the idea of pizza. Because I am obsessed with providing healthy foods, we make our own 10 minute version.

This is a really easy and fun way to get Mr. Toddler to eat some extra spinach. The bonus here is that he got to make it himself!

Mr. Toddler has been loving on raw vegetables lately, particularly broccoli and carrots. This makes snacky lunches a perfect and easy option for a busy day!

Steamed sweet potatoes and a heart shaped sandwich. After all, it is Valentine's Day coming up! The sandwich contained spinach and some 'Old Cheese' from the farmer that brings it to us every Tuesday. The stuff is delicious, I must admit. There are loads of dairy farms in our area, and we actually live near one a few houses down. You can walk up to the cows and pet them if you like. They kind of scare me though.

Mr. Toddler recently had smoked salmon for the first time. It's definitely one of my absolute favourites and apparently his, too! He loves the stuff.

I give it to him on whole grain or spelt crackers, and in this photo he also had some grapes. No veggies? Yes, I know, but he's taken to munchking on broccoli as a snack so I'm getting a bit less strict with myself on that during lunch time. 


Dinners


Steamed brussel sprouts, with my smashed sweet potatoes, and a Dutch stewed meat. Pretty much Mr. Toddler's favourite stuff at the moment!

Roasted green beans and meatballs. I love stuffing my meatballs with whatever I feel like at the moment. Sometimes it's spinach (blended and added to the eggs), grated carrot, mushrooms, etc. You can get as creative as you want here. Plus, served on spaghetti, I bet your kids wouldn't even notice the extra veg!

Snacks and desserts 


Mr. Toddler has free range to grab snacks as he pleases. Those snacks are pretty limited to fruits, dates, and nuts:

However, we do occasionally go ahead and make something special like homemade chia seed pudding, which also makes a wonderful breakfast and dessert!

Mr. Toddler loved making it and tasting it every step of the way!

Cinnamon baked apples also double as a great dessert and breakfast!

Alternatives: 


For us, lunches and dinners are really similar style meals a lot of the time. Here are some more simple ideas (leftovers hint hint) for delicious and healthy meals for your little ones!
