What I Wish I Ate Wednesday

So we're all ill at my house. Fever, sore throat, coughing and all sorts of icky symptoms that we had been lucky enough to avoid this past season until the last week. As far as food goes, it means that I have been unwilling to cook. Yep, no cooking. Instead, it's takeaway and freezer meals for this mama and some much needed rest.

We actually didn't really work on new toddler activities, and my kid finally got to watch cartoons all day. Oops. I'm betting that once things are back to normal with all of us, he's going to be a bit upset that the TV (netflix) watching in mama and daddy's bed is not going to be a permanent thing. Oops again. 

Because of the above, I'm sharing what I wish I would have eaten on Monday instead of what I did eat (tea, tea, and more tea).

For breakfast:

I just love brussel sprouts and want to eat them all the time. We also have homemade sriracha which just makes everything better. Yes, for breakfast, too. I'm like that.

For lunch:

Tuna cakes

We haven't had fish in a while, and I'm having a major craving for a patty like this:

These do require a bit of work to prepare and definitely not anything I felt like cooking, but mmm, they sure are yummy! 

I kind of adore sweet potatoes and this is most definitely an easy recipe! It only requires a few minutes of 'work' although cooking time is a bit longer.

For dinner:

Something easy, filling, and hearty. I like thick soups or stews, especially when I'm ill. If the hubby wasn't away working on our roof, I would have requested he prepare this.

For dessert:

Okay, actually this is something I've been making all the time. I've noticed that whenever I'm not eating enough during the day, I end up having a major sweetness craving. This has been a healthy and warming way to get my sweets in!
