WIAW: Paleo food and noms

First thing in the morning, I always have a cup of coffee. Or three. I try to get up before everyone else so I can enjoy a little bit of quiet, me time. On Monday, I actually managed to get up at 5.30 in the morning for the first time in weeks, and loved the quiet. 

As a result, I drank far too much coffee and ended up with a stomach ache. By the time Mr. Toddler was up at starting his day, I still wasn't feeling terribly hungry from the coffee overload and munched on an apple instead of breakfast. 

After he finished up, I started prepping some meals for the week, and decided that I was starving. So at 11.00 in the morning, I finally had a gigantic portion of: 

Late breakfast/early lunch


Leftover meat that I had stewed last week. I used a Dutch inspired stew, and simply shredded the leftover meat. I added sweet potato and carrot noodles and cracked an egg into it. That's generally how my breakfasts go. Veg + egg + leftover meat. Oh and green things.

I really have no idea why it took me so long to try them because I love them so much more than zucchini noodles! 

I ate quite a bit really. In between this and dinner, I was feeling majorly snacky and ended up shoving my face full of fruit and hard boiled eggs. Not together. Appetite ruined? Check, but I suppose there's worse food for face stuffing. We had some delicious mangoes from the market and I guess the Toddler and I failed to restrain ourselves. 


Dinner


Spur of the moment dinner - broccoli and ground beef 'pasta' using breakfast as inspiration because I simply served over more carrot and sweet potato noodles. 

Because I was lazy. Actually tired. I was exhausted and had no desire to think up anything new. It was actually quite delicious.

I also ended up adding a heaping serving of my homemade sambal, which always takes everything to a new level of awesome. 

I ate dinner with Mr. Toddler around 17.00 because I was again, very hungry. Once the husband got home around 21.00, I ended up having another bowl of this 'pasta' as a snack. And after watching some mindless tv (netflix), we passed out in bed at around 22.00.

Really, not as much food as usual. We had actually spent the weekend at our new house ... in the caravan, but we totally consider it as sleeping at the house. The husband and I finished off some scary work on the roof while Mr. Toddler napped. Have I mentioned how terrified of heights I am? And that the husband needed me to hold heavy stuff while leaning off the edge of the roof? Oi. 

Needless to say, it was a scary and exhausting weekend that I am glad is over. Hopefully this next weekend we can finish off some major roof work and finally start doing work on the inside!
