What I Ate Wednesday: Paleo and toddler approved!

I keep making these What I Ate posts chatty. Today, just like last week, I'm keeping the intro short and sweet! Don't worry - we'll catch up some later into the post! Here's what I ate last Wednesday:

Healthy green eggs. Need I say more? They're pretty fantastic and super delicious. It's always before early when I wake up, so I'm using a recycled photo. Please forgive me? My tot and I usually split 1 portion. The two year old has an appetite comparing to that of a starving teenager. 


Apple and salmon rolls (again). You've seen it before and these easy peasy rolls are definitely a keeper. Busy days usually mean I don't have too much time for lunch, making these perfect, but! This really wasn't enough.

This past week has been madness. Pure and utter madness. Last week, I don't even remember when I stuck to the meal plan and when not as I didn't refer to it once. Mr. Toddler was ill, we've been working tons on the house, and Mr. Toddler also kindly shared his sickly germs with me so cooking became quick and easy meals like one pot stew:

Meat, veg, herbs, and perhaps a splash of wine (sshhhh) meant deliciousness! 


No photos here. I was one tired Mama, and was more than happy to collapse at the dinning room table to get blogging done while the husband finished up some tasks at the house. So evening time is where I snack. Last week it was chocolate.

During the day, I am usually running around like a crazy pants trying to juggle housework, Mr. Toddler, and whatever else there is to do like renovations at our house. Evenings are my time to have a cup of tea and get some work done at the computer or watch netflix with the husband.  

Let's get personal 

Before we finish up, I want to share one last closing thought. Since about January, we've have had some pretty rough news. One thing after another with the health of relatives has really been causing a lot of stress and I'm still all over the place with my appetite, hence the tiny lunch. Even though paleo has kept me at a pretty good weight, since January, I can't seem to get back to my normal. I now weigh less than I ever have as an adult. 

I can't seem to gain the weight back. What, you want to gain weight?! Yes - I want to look healthy, and not twiggy. Really, I'm not too sure what to do about it, but my portions are much smaller than they used to be, which you can also see from this post. Aside from the occasional chocolate, I haven't found myself really wanting to eat much. That's kind of my disclaimer with this week's WIAW. Eat enough. It's good for you ;)

So folks, have you ever experienced something like that?  I'm not terribly sure what to do about it at this point. That seems like a sad note to leave off on. Here's something more exciting: 

We're getting closer and closer to finishing off the house! My husband wants to celebrate his birthday (30 April) in our house, which means that we should be able to move in shortly thereafter! I'm counting down the daaayyss! And I am imagining our huuuge veggie garden, which should hopefully also inspire me to get back to loving the kitchen!
