Rehabilitation centre WIAW

It's been quite some time since I've shared a What I Ate Wednesday post. I'm still dealing with my recovery and still will be spending at least two months at a rehabilitation centre working on physical therapy, waiting for my body to heal and get stronger so that I will be able to take care of my family (and myself) again once I am home. 

It is such a hard journey folks, and I'll probably be posting a general update. For now, I'll keep things light and food related because food is pretty awesome, right? Yep! It is.

Confession - I haven't cooked in almost two months and it's making me crazy. Not that I have the time or energy to really cook like I used to, but I miss it. Howevvverrrr, I have been told that next week, I'm going to be able to practice cooking in the wheelchair friendly kitchen here in the centre. In the meanwhile, I'm getting to eat the food prepared here - which is oh so typically Dutch - or yummy things that the husband brings every now and again. 

And finally, here's a look into the type of food that I'm getting here at the rehabilitation centre.

Breakfast


I was never good at getting photos of breakfast prior to my accident, but now I'm even worse. It really doesn't and hasn't changed terribly much. I still have coffee, but I wake up at a more reasonable hour - 7 am ish instead of 4.30. The kind food ladies (I don't know how to translate their precise position here) bring me two cups of coffee instead of the typical one cup. Yea, still addicted...

I also get fruit, yogurt, and the biggest change is a piece of whole grain bread and jam. I usually can't manage to eat so much for breakfast lately and end up skipping on the bread. I miss my paleo breakfasts though, but I just prefer to eat breakfast later in the morning which is not possible here.

Lunches and dinners


Normally, Dutch folks eat bread for lunch. With a piece of cheese or a slice of lunch meat. I actually had to gain some weight when I first came here and was offered the option of eating two warm meals instead of one per day. Here are some of the types of meals that we get here: 

Salmon (yum!), sauce (???), mashed potatoes (typically Dutch), and something green (spinach apparently, but I have my doubts...).

Boiled beans, boiled potatoes and meatballs. Boiled and and boiled is kind of not my thing so I tend to smother the food in a sambal (hot sauce type thing).

And here's a tasty meal! It's shoarma with red chili peppers, baked white potatoes (on the side), and a Greek salad of sorts. I miss sweet potatoes but this is actually quite a yummy meal even if I would have prepared it a bit differently ;) Have I mentioned I miss cooking???

And here's the good stuff! A lot of days, I really just crave a big gigantic salad. The days that the hubby comes, I sometimes ask him to go to the grocery store and pick up the necessary goodies so I can go to town on some major greens. 

Liiike this lentil + leafy greens + beet salad! While it's not paleo (lentils and some cheese), this salad was absolutely delicious, healthy, and I will most definitely be making it in large batches once I'm home.

This one is probably the most delicious salad I've had in months! There were goats cheese, cucumber, apple, walnuts, greens, and more yumtastic ingredients! It was so filling, too! I love that salads keep me full longer than a few slices of bread (sorry Netherlands), but the key is to make sure that they contain enough delicious ingredients for that.

 What I Wish I Was Eating


Even though the kind staff at the rehabilitation centre has been doing a very kind and good job of trying to conform to my food preferences, I really miss cooking and eating the type of meals that I am used to - paleo style! Here is a look at what I really wish I was eating! 

Breakfast

I would prefer to have breakfast mid morning. A savory, veggie loaded breakfast sounds pretty fantastic anytime of day!

Lunch

Oh how I miss thespaleo tuna cakes! These tuna cakes contain veggies, fish, and are delicious! I wish I could cook up a batch to enjoy alongside a big ole salad!

Dinner

Pizza. Yea, I'm craving junk food right now, but homemade is really not that junky. My husband makes amazing homemade pizzas and I am so excited to go home for a weekend and make kindly ask him to make one with me.
