Preschool themes 2015-2016

Today I am sharing some major plans and ideas for our homeschool/pre-school year! Mr. Toddler is turning 3 in September and I really want to get some stability and rhythm into our days when it comes to learning activities and trays. This year, we are again continuing with a Montessori inspired approach.

Busy week (chatty) meal plan

This past week was my first one home since my accident. You guys - it has been rough. Having the kiddo around 24 hours a day while trying to get back to the swing of normal life has been exhausting. 

On the bright side, I do get paid in cuddles and kisses from Y who is going to be three soon. Which means those kisses and cuddles are even more precious because he rarely wants to sit still. 

Being away for him for so long has really taken a toll on my own mental state. I'm realising now how much I have missed. It's strange to look at him and realise how much he has grown, learned, and changed and how little of it I saw in that time. I think he realises it, too. 

He has these moments where he climbs on my lap, gives a kiss, and then runs off. Those moments are so precious and make me realise how lucky I am. Not only to be alive (which is nice of course given how rough the accident was ;) but also how lucky I am to have such a sweet little boy. Those simple little hugs and kisses will get less frequent as he gets older, and I know now more than ever how important it is to remember and savour these precious times. 

Before, I would frequently get caught up in folding laundry or cleaning this up or putting that away. Now, we go outside more. We cuddle more. The laundry won't go anywhere, but Y will. He's going to grow up. I'm pretty sure at 16, he won't be climbing on my lap to give me a hug and do a puzzle together. 

Oh and this is a meal plan post right? Well, my meal plans rarely happen without a life update, random chat, or whatnot so that's what we get today! 

This upcoming week is going to be fairly busy with more rhythm finding, stuff sorting, homeschooling, aaaaaand therapy and doctors appointments for me. The latter being slightly less fun but necessary things. I'm going for fairly easy but flavourful and healthy meals this week with lots of leftovers. The week after, I hope to get back to 'creative' cooking with new recipe testing but for now, we're going for simple (more or less)!

I am so excited for our house to be live-in-able. It's still going to be a few months, but it's going to be much easier for me to get around, and will have so much more space for Y's (the kiddo) shelves and works!

One of the things I learned when I was eating paleo all of the time was that there it doesn't matter if something doesn't 'seem' like a breakfast food - if it's yummy (healthy) and you want it, go for it! Soup for breakfast? Why not? Brussel sprouts? Oh, I so did that.

Healthy meal plan

So guess what??? I'm finally home!  I know this first week back home is going to be very intense. One of the things that I cannot wait to do though is cook. It's such an important aspect of my identity, my culture, and my role as a mother and wife that I am incredibly anxious to get back to doing it. 

At the same time I know I will have to take it easy. I know there will be days that I really won't have the desire to use my energy to be in the kitchen. That's why I know leftovers will come into play so I can both feel all happy because I am taking care of my family again as well as getting time to rest. 

This week's meal plan relies on leftovers for keeping us going during the day.

A guide to cutting activities and free ocean themed cutting practice

Summer is a great time to learn all about the sea and ocean! A lot of families visit the beach - an environment that is filled with all sorts of fascinating items and experiences! Their interest may be sparked, and it's a great opportunity to teach them all about the sea! 

Today, I am sharing a fun cutting practice printable using this very theme! Mr. Toddler loves seashells and fish and this was absolutely perfect for us! I hope your little ones get just as much fun (and practice of an important skill) out of it! Cutting practice

This simple printable (available for FREE to download at the end of this post!) is a great way to practice sciscor grip and cutting skills for kids. All you have to do is download the printable, print, and ask your child to cut the sheet along the dashed lines.  For my toddler, I also cut out the strips horizontally (along the solid lines).

While staying in the rehabilitation centre since my accident, one of the things I have missed doing has been cooking. It's been so strange to go from being mommy and wife 100% of the time to having to focus so much on myself. And also to have people do things for me that I normally do. Like cooking. Or rather having hospital meals delivered to me. 

My stay at the rehabilitation centre however is coming to an end in a few days and I get to finally get back home! One of the things I cannot wait to do again is cook. It seems a bit silly really as our lives have been changed so drastically due to my injury and I have to relearn how to do so many things. But cooking? Oh man - focusing on delicious, healthy ingredients, easy recipes, delicious freeessshhh veggies from the garden. Oh, I cannot wait! 

Plus, I am beyond excited to detox my husband and son from all of the junk they have been eating because he has so little time to cook. Totally understandable, but I'm looking forward to taking care of my boys (and me!) again with delicious, healthy meals. 

However because of my accident, I still have days with pain, days when all I can do is be a vegetable on the couch, and days that are a bit off. That's okay and I know it will get better with time. It already has. But I also know that planning my meals is absolutely going to be a necessity. Being smart in the kitchen can be fun though, and there are plenty of ways to re-purpose leftovers in delicious and exciting ways so you don't get tired of eating the same meal 13947 times in a row. Okay, I do exaggerate a little bit, but it certainly can feel like that, right? 

Well, my very long point here is that leftovers can be wonderful! For example, one of my favourite Dutch stew recipes went from dinner like this (link to recipe below):

To breakfast like this:

The breakfast version was so easy to prepare, so tasty, and oh my gosh - filled with so many delicious textures and flavours! The spices from the stew had had a night to really settle and were 'refreshed' with a quick pan fry. The eggs added a creamy texture, and the sweet potato presented a delicious and fun element!

The sweet potatoes are kind of awesome in this recipe. You see, this post includes a fun technique for preparing sweet potatoes! I call these a sort of sweet potato noodle due to the long, thin strips of sweet potato that it incorporates. If you are strictly paleo or gluten free, this technique would also be a nice way to serve sweet potatoes alongside a pasta sauce! All in all, this is a very simple but effective process. By preparing sweet potatoes in this way, you also cut back on actual cooking time, which is always a fun bonus!

Introduction to France 3 part cards

Happy Tuesday everyone! After all of the fun I had putting together my USA themed printables for the 4th of July, today, I am very excited to share with you a mini set of printables focused on France. July 14 (Bastille Day) is a national holiday celebrating the start of the French Revolution! 

In case you haven't noticed based on my love of creating printable sets based on different countries or continents - I am kind of a history geek. I also spent a year living in francophone countries and absolutely loved my experiences learning French and living there! The culture, the food, the people (yes they are very friendly in spite of stereotypes), and oh my - the beauty of the country left a permanent impression. In this post, I am sharing a small bit of my experiences there by showing you the beauty of the country of France!

Kid Approved: Spinach Meatballs

I am so, so excited to share with you the first recipe that I have created in months. I'm not sure if it's the fact that I'm back in the kitchen, that I'm back to exploring new recipes, that this particular dish was increibly easy to prepare and was super delicious, or if it's the fact that I got my kid to eat spinach. I'm pretty sure the last one had a huge impact on the meals I prepare.

Actually, Mr. Toddler is an official recipe tester in my home. If he doesn't like the dish I prepare, it won't make it on here. Luckily, these super easy meatballs made the cut! So here ya go!

Psst: Here's a time saving tip! If you are afraid you'll have too many meatballs, you can form the extras into balls and freeze them uncooked. Or you can double the recipe and freeze the second portion. Freeze them on a baking sheet so they will not stick together - after 24 hours, transfer into a bag or freezer friendly container and lable. 

When ready to use, defrost them, and then pan fry or cook however you like your meatballs!

Spinach meatballs


  • 1 onion - diced
  • 6 small, button mushrooms - finely chopped
  • 1 cup spinach (roughly chopped)
  • 1 tablespoon garlic powder
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 lbs/500 grams of ground meat (beef, chicken, whatever you choose)
  • 1 egg
  • 2 tablespoons of extra virgin olive oil (plus extra if needed)
  • Optional: 1/4 teaspoon chili powder


  • Finely chop all the veggies
  • Add veggies, herbs/spices, meat and egg into a large mixing bowl
  • Mix lightly - it is important to avoid over mixing 
  • In a large pot, heat oil on medium heat
  • Form meatballs with your hands or hint: use an ice cream scoop
  • Pan fry the meatballs for 5-10 minutes and then turn. The sides will also start to brown at this point, and you should be able to move them around easily in your pan. The exact amount of cooking time per side depends on the size of each of the meatballs. Mine were small, which meant a short cooking time. 
  • Serve with fresh herbs, hot sauce, pasta, or eat it as is!

Happy Monday everyone! Today I am sharing a fun freebie that is perfect for summer! Mr. Toddler spent the week with me and we had a ton of fun with this simple fruit themed cutting practice! 

We've been loving snacking on all sorts of delicious fruits this summer - easy, healthy, and so tasty! Mr. Toddler's current obsession with watermelons and strawberries caused me to create this printable and he loved  it!

23 Toddler meals and ideas

I'm finally sharing another What I Ate Wednesday post! Today is a bit special because I managed to snap photos of my sidekick's meals. I'm quite excited about this as well because this is the first week that I have been back in the kitchen since my accident.

We had tons of fresh fruit and veggies stocked up in the fridge (because I had seriously missed them since being in the hospital and rehabilitation centre) and incorporated them as much as possible into every meal.

Mr. Toddler also needed the detox from french fries and candy that he had been getting since I'm not around as much. The kiddo was actually quite happy with the extra veg and fruits and amazed me with how eagerly he devoured them! 

I have to say though that I can definitely tell a change in Mr. Toddler's behaviour based on the days that he does consume more junk food as opposed to the days that he... well... doesn't. No sugar rush means he listens very well, can play relatively calmly, and we generally avoid major meltdowns. Sugary, processed foods? Oh man! The tantrums, running away, and even throwing objects are sure to happen as he cannot contain his energy. I definitely try to avoid them.
