Busy week (chatty) meal plan

This past week was my first one home since my accident. You guys - it has been rough. Having the kiddo around 24 hours a day while trying to get back to the swing of normal life has been exhausting. 

On the bright side, I do get paid in cuddles and kisses from Y who is going to be three soon. Which means those kisses and cuddles are even more precious because he rarely wants to sit still. 

Being away for him for so long has really taken a toll on my own mental state. I'm realising now how much I have missed. It's strange to look at him and realise how much he has grown, learned, and changed and how little of it I saw in that time. I think he realises it, too. 

He has these moments where he climbs on my lap, gives a kiss, and then runs off. Those moments are so precious and make me realise how lucky I am. Not only to be alive (which is nice of course given how rough the accident was ;) but also how lucky I am to have such a sweet little boy. Those simple little hugs and kisses will get less frequent as he gets older, and I know now more than ever how important it is to remember and savour these precious times. 

Before, I would frequently get caught up in folding laundry or cleaning this up or putting that away. Now, we go outside more. We cuddle more. The laundry won't go anywhere, but Y will. He's going to grow up. I'm pretty sure at 16, he won't be climbing on my lap to give me a hug and do a puzzle together. 

Oh and this is a meal plan post right? Well, my meal plans rarely happen without a life update, random chat, or whatnot so that's what we get today! 

This upcoming week is going to be fairly busy with more rhythm finding, stuff sorting, homeschooling, aaaaaand therapy and doctors appointments for me. The latter being slightly less fun but necessary things. I'm going for fairly easy but flavourful and healthy meals this week with lots of leftovers. The week after, I hope to get back to 'creative' cooking with new recipe testing but for now, we're going for simple (more or less)!
