Healthy meal plan

So guess what??? I'm finally home!  I know this first week back home is going to be very intense. One of the things that I cannot wait to do though is cook. It's such an important aspect of my identity, my culture, and my role as a mother and wife that I am incredibly anxious to get back to doing it. 

At the same time I know I will have to take it easy. I know there will be days that I really won't have the desire to use my energy to be in the kitchen. That's why I know leftovers will come into play so I can both feel all happy because I am taking care of my family again as well as getting time to rest. 

This week's meal plan relies on leftovers for keeping us going during the day.

Whatever I feel like making because I'm inspired (or lazy!) 
Lettuce wraps 
Brown rice pilaf with a large salad with veggies and greens from my mother in law's garden. Oh and this recipe is my grandma's so it's awesome.

Unstuffed cabbage

Quinoa and green bean salad with a protein of some sort. I'm thinking garlic roasted salmon.

Stir fry 
Leftovers/someone else cooks 


Breakfasts and lunches


Leftovers

Salads consisting of whatever is in the house. At least one of them will be this delicious tuna salad

Eggs like my toddler made egg muffins. The wonderful thing about these is that I can make a large portion, swap a few basic ingredients for variety, and enjoy them for a few days in a row. They can be breakfast, lunch, or simply a snack.

Or my sweet potato and zucchini breakfast hash. Easy and delicious. There's no need to say more.
