Meet my blog designer

You might have noticed a few changes around here lately. A few weeks ago, I got to work with an amazing blog designer that completely changed the look of my little blog! 

I worked with Tiffany from Tiffany Kuehl Designs. Her work was so wonderful and she made the entire process so easy that I wanted to share with you guys! 

In case your on the lookout for a new look, or maybe you just want a few crisper elements on your blog, I highly, highly recommend looking through Tiffany's portfolio!

First impressions


First things first, I was definitely impressed with Tiffany's clear and crisp blog design. Obviously, if I was going to invest in a new look for my own blog, I would want to get it from someone who had invested time and effort into their own. Immediately, I saw that she had a great eye for colours, style and that her blog was so easy to navigate. 


How to get started


First, I filled in a questionnaire, where Tiffany asked some very important questions. The thing is, I knew that I didn't like how my blog looked before, but I didn't know how I wanted it to look beyond the same type of colours (yellow, gray, and some teal). When I sat down to actually write down what I wanted, I needed to do some research and definitely realised what I liked and didn't like. If I would have done that myself, my blog would still look... like it did before! 

After filling in the questionnaire, I was put on a short waiting list (she contacted me to start the process earlier than expected). Tiffany also immediately sent me a few ideas for backgrounds! I was so impressed with how quickly and thoroughly she responded to my questions, too. She was so professional and very friendly! 

Once it was my turn, Tiffany worked very quickly and I quickly had emails with ideas, buttons, logos, and a facebook cover page! 


Within about a week and a half (or a week, I'm not sure other than it was quick!), Tiffany was done! She transferred everything to my blog once I agreed that everything was perfect on the sample she was working on! 

All I had to do was tell her if I liked the new elements she added. I did! Tiffany really helped me to figure out what I wanted, but I also loved that I didn't need to have every detail figured out! 

Working with Tiffany was such a pleasure and I highly recommend using her services!

What my toddler ate Wednesday (Paleo kids!)

For today's What I Ate Wednesday post, I thought I would change things up! I am sharing a typical day of meals for my toddler! They're all paleo (except a primal lunch!), and are very representative of any given day. 

Note: my son isn't strictly paleo or anything. He does get grains, quinoa, and good quality dairy every so often. The overwhelming majority of his meals however are paleo because that's what we eat.

Oven roasted chicken



I have been in love with roasted chicken. It's so easy. So versatile. And leads to so many fantastic leftovers. Oh HAIII chicken broth. Mhm. My grandma is so proud.

Shredded chicken that is absolutely delicious in chili (paleo if you roll that way)? Yes, please! Or just devouring it straight away immediately after it comes out of the oven, whilst trying not to burn yourself. Oops. 

This delicious oven roasted chicken is so easy to prepare and is perfect for the entire family! {Welcome to Mommyhood} #OvenRoastedChicken, #paleo, #whole30

I like to cut the chicken along the breast side in order to cut down the cooking time a bit (depending on how large the chicken is). The bonus to doing this, too is that there is more chicken facing upwards, and more of it gets crispy. 

Obviously that's the most important factor in considering how to prepare your chicken - optimal crispiness. 

You guys, even the Toddler loves chicken prepared this way! The kid is weird about his chicken. I mean, this is the same kid that can inhale smoked salmon, that munches on raw broccoli, loves to eat whole avocados as a snack, but that refuses to eat sweet peppers.

Back to chicken, sometimes Mr. Toddler absolutely adores it (prepared roasted whole in the oven!), and other times he will literally spit it out if heaven forbid Mama actually dared to place a piece of chicken breast on his plate, next to his beloved sweet potatoes! Oh tragedy. 

Sometimes, feeding  Mr. Toddler is really a guessing game. Unless I prepare this recipe. Then all I have to worry about is him going too close to the oven because he can't wait for dinner and needs to eat noooow!

So here is one of my favourite ways to prepare a whole chicken! Loaded with delicious herbs, spices, and all sorts of amazing ingredients that blend together in an awesome combination of: yum!

Meal Plan: Toddler friendly and totally healthy

I've kind of realised I am having a bit of a food problem when it comes to meal planning - I want to eat everything. Okay, actually no, but I really get stuck on a particular ingredient (chicken or sweet potatoes the last two weeks). And everything I do want to eat should involve that particular ingredient.

This week, I am trying to seriously get out of my sweet potato obsession mode and diversify my meals. I'm trying, but I'm not really sure about how successful I was. At least I avoided including my bacon wrapped sweet potatoes, smashed sweet potatoes, sweet potato noodles, and mashed potatoes all in the same meal plan. A few of those dishes will probably wait until next week. 

Probably. Unless Mr. Toddler requests sweet potatoes for lunch or dinner. In which case my hands will be tied and I will simply have to prepare them. Obviously my two year old controls my life.

Aside from getting stuck on particular ingredients, I also realised that a lot of my recipes and foods that I want to cook are either Russian inspired or Dutch inspired. It's been a bit different lately because I'm trying to adjust our meals to make sure that they also fit my in laws' pallets, but aside from the occasional stir fry or pasta dish, I don't really venture out into other styles of cooking. 

How about you? Do you try to get a diversity of 'ethnic backgrounds' in your cooking? While I was planning some homeschool activities for my son, I realised that I have never prepared an African dish. I mean, that's a huge continent with loads of food inspiration potential that I have never even thought of exploring. Not to mention that Asia also has loads of amazing flavours and dishes that are unique to each country/region in it. 

I really want to challenge myself to go beyond my comfort zone and try new things. Not only do I find it absolutely and totally fun, but um, think about all of the potential for deliciousness! I need to get some research going, think about how to make dishes paleo (cuz I'm like that) and get my kid involved!

Thank you and Life update

Today is definitely going to be a different kind of post. Instead of a sharing a recipe, sharing a toddler activity, or a meal plan, I'm going to get personal. 

I like to keep things real every now and again and to share a bit of myself, instead of just chatting about food, as interesting and wonderful as food is. 

Before getting on with a long chatty post, I just want to say: 
This blog, and community, friendships, and connections that I have made due to it have been so supporting and uplifting while my family has been going through some tough times recently. 

Thank YOU! Thank you for dropping by, thank you for commenting, and thank you for your interactions! It has been such a blessing to have other folks to connect to lately even if I feel that my blogging has been slacking and less organised than normal. 

Which brings me to my next point- I have been neglecting doing a few bloggy things that I love. Like commenting and visiting your blogs! I'm so sorry and am working hard to catch up and get back to the swing of things, but: 

Life has been a bit challenging lately, to say the least. So here's what's been up:

At the beginning of the year, we found my father in law has cancer. Not the treatable type where you have the possibility of remission, but the type that has spread everywhere. Basically life expectancy is well, hopefully to the end of the year. 

This has been rough. I don't even know how to explain it, but as you can imagine, we're struggling with it. I have also been very close with him, and aside from trying to help my husband through this, I'm pretty devastated myself. Luckily, he is getting chemo so there is some hope we could celebrate one more birthday. 

It's been about a month and a half since we found out and the news is starting to feel ... I don't know, life is becoming normal again. We are trying to enjoy our time together, visit often, and just squeeze in as many beautiful memories as possible. I'm also being a total paparazzi and am making obnoxious quantities of cell phone shots in poorly lit rooms. It's the memories that are important, blurry or not, right? ;) 

After we got the news regarding my father in law, my grandparents came to visit. It was such a relief to be in their presence, to show them our house (construction site or not!) and to just be together.

I realised, however, after speaking to my grandfather for about 10 minutes that something wasn't quite right. After some questions, I learned he has Alzheimer's. Um, say what? 

Being an expat makes that pretty tough to stomach. I guess my family didn't want to worry me, but it's of course impossible if we're together. It's scary. I can't imagine knowing that your memory is fading, to know that everything will just ... go away. It's not too bad yet, and mostly he 'just' gets confused with simple things like what they are going to do, we had the same conversation many times, even during the same day, he 'just' gets confused easily.

I know though that it's just going to get worse. That's the reality. One day, he'll forget how to eat. The same man that just a few years ago, helped my husband to do maintenance on my mother's car, the same man that fixed my mother's roof just a year ago. 

And then, a few weeks later, we found out one of my husband's aunts has throat cancer. 

So that's been happening, and is why I have been struggling to keep up with blogging to some extent. 



I've been trying to keep with posting as it's been such a wonderful distraction and a way to keep my normal.  

In spite of all of everything we are dealing with, the Husband and I are trying to keep it together and focus on the positive like being together. There's still time to enjoy with all of the lovely people in our lives and that's precious!



Mr. Toddler still brings so much joy to our lives, and we are generally grateful for his awesome. 

Speaking of kids, we want another one. As in yesterday, but given that the closest thing to being done on our house is still the caravan, that's not really going to happen too soon... maybe. It's a conversation we will be revisiting shortly ;)  

We've definitely realised how short life can be. We've realised how important it is to be thankful for what you have. We've realised how grateful we are for all of those little moments. 



Like Mr. Toddler getting totally excited for cooking egg muffins! That he did (mostly) on his own! 



Or watching him shovel smoked salmon into his mouth. He first placed it into the muffin tin for our muffins. And then preceded to eat it all. Hilarious! Until we ran out of salmon. 

I'm also trying to enjoy the fact that I get asked for id when I buy wine here. By the way, you only get asked if you look under eighteen. I guess I should be grateful for looking like a 17 year old. 

All in all, we're taking life one day at a time. We're working hard to get our home finished as quickly as possible and we are really trying to enjoy those precious moments together. It's hard, but we know life will calm down again. Hopefully sooner rather than later!

Delicious (paleo) Tuna salad

I recently discovered that Mr. Toddler adores fish. Like a lot. I don't tend to buy or prepare it too frequently as my husband doesn't particularly enjoy it, but I kind of love it, too. 

I never really focused on adding very many varieties of fish to Mr. Toddler's diet. I had a sort of presumption that he would prefer meat over fish due to the stronger flavours of the latter. 

Mr. Toddler actually caught me off guard with his recent request for 'fiiiiiiiiiiish' (or rather ryyyybkoo in Russian, but I guess most of you wouldn't know that).  

Since then, I have been trying to incorporate it much more into our meals. But then tragedy struck, or at least tragedy in the eyes of a two year old - we ran out of the smoked salmon that he had been obsessed with all of the previous week. 

Being the ever caring mommy that I am, I went on a hunt for fish... in the pantry. I knew I needed to satisfy the two year old's fish craving or else.

Or else there would be consequences of crying, screaming, and general temper tantrum-iness that happens when my sweet little man gets cranky and hungry at the same time. Seriously, that is a general guarantee that Mommy gets a headache and Mr. Toddler thinks the world is ending. 

Alas, the only fish available was tinned tuna. That would have to do at the moment, and after checking out the refrigerator, I came up with a simple but absolutely delicious way to turn tinned tuna from ... well... tinned tuna into toddler approved awesomeness.

I love that this salad took all of 5 minutes to prepare - the maximum I can get Mr. Toddler to be patient with me while I make a lunch after a busy morning of tot school and playing. 

This salad will definitely be a staple in our lunch time routine from now on. Aside from being filling, delicious, easy, healthy, and totally mom approved, it averted a temper tantrum which basically means it's magic.

Healthy recipes for kids: coconut chia seed pudding

Mr. Toddler is starting to notice that sweet foods exist. He's noticing that desserts exist.  Which makes me cringe a little. If you've been around this blog for a while, you know that I'm quite particular about what I feed my son (2.5 years old). My husband and I are very cautious about the foods he gets, and try to give him a balanced, healthy diet. 

The thought of him wanting candy, cake, and ice cream scares me. However, instead of panicking at the thought of him getting older and wanting to eat loads of sugary treats, I am trying to get creative in the kitchen by coming up with healthy alternatives for some less healthy desserts. One of those alternatives is:

Healthy Meal Plan: With snacks and leftovers

Let's talk food. I'm actually quite pleased to say that this past week was the first time since ... last year that I am finally back into the swing of food, food prep, cooking, and have been hungry again. After all of the bad news we've had this year, my appetite and just plain ole desire to cook has been up and down (more down) so far. 

This week, when I sat down to meal plan, I was actually excited again about food! Like really, really excited! I've been trying to get Mr. Toddler more involved in cooking, which has definitely been helping me to get my kitchen groove back. The little man eagerly goes to grab a whisk every time I suggest we do some cooking! 

This week is also quite exciting because the Husband and I are celebrating our six year dating anniversary. Seeing that number written down is actually a bit strange. On the one hand, I feel like we've been together quite a long amount of time, but on the other hand, my grandparents will have been married for 55 years this year. Now that is an anniversary! 

The Husband and I don't do much as far as anniversaries (wedding or dating), but we are going out for dinner and are going to spend the day together. Nothing terribly exciting, but spending quality time together has been quite rare the past few months. Unless you count sawing, hammering, drilling etc while working on our house. 

I don't. I like DIYing and all, but I miss getting dressed up in heels rather than work boots. 

So food: I'm really looking forward to get back to cooking, too! I have quite a few oldies coming back this week in order to keep my time in the kitchen efficient. I also have quite a few new ideas and am really, really, reeaaally looking forward to testing them out! Here's what I have planned:

Poultry Seasoning Recipe

I am kind of obsessed with keeping things in the kitchen all natural and such. It really is important to me to keep our meals healthy (sans additives and e numbers), but still full of all sorts of delicious flavours! 

One of the most important ways that I add 'oompth' to our meals is with the seasoning that I add to them. A teaspoon of this and a pinch of that can take a dish from bland to a harmony of flavours that make your taste buds dance. No really, it happens. 

Today, I am sharing something incredibly easy that will take your poultry or chicken (or even your veggies, I won't tell!) to a whole new level with my delicious poultry seasoning!

WIAW: Paleo food and noms

First thing in the morning, I always have a cup of coffee. Or three. I try to get up before everyone else so I can enjoy a little bit of quiet, me time. On Monday, I actually managed to get up at 5.30 in the morning for the first time in weeks, and loved the quiet. 

As a result, I drank far too much coffee and ended up with a stomach ache. By the time Mr. Toddler was up at starting his day, I still wasn't feeling terribly hungry from the coffee overload and munched on an apple instead of breakfast.

Putting together these cards reminded me how excited I am for spring to arrive! Spring always feels like a fresh start with new possibilities and new adventures to go on. One of the adventures I cannot wait for is the ability to have a large garden in our new home. 

While the house itself still requires quite a bit of work, the large garden is definitely something that I can start giving some attention to alongside my little sidekick! Before we get started planting flowers, we are going to spend a bit of time reviewing their names and working on vocabulary!

Healthy {Paleo} Meal Plan

Winter has hit us. It's the strangest thing. We have had a few snowfalls, actual snow sticking on the ground, and lots of ice. Prior to this month, winter was no where to be seen and we were hoping that we'd be able to make it through this season with zero snow. Mostly for house construction purposes, but alas, Dutch weather rarely cooperates and in fact is more likely than not plotting against everyone. No really, it's kind of a fact. 

Okay, maybe, perhaps I am exaggerated a teeny bit, but it really has surprised me that we are now actually having winter when I am totally ready for spring summer. I'm even prepping spring themed activities for my toddler's shelves. Not to mention planting stuff in the garden.


The thought of actually going on holiday in the summer also seems particularly nice. And - the biggest thing - our house should *hopefully* be livable by then. 


Not that it would be done by any stretch of the imagination but we'd be able to park a bed/mattress/some thing to sleep on somewhere and have access to water and heat. Those are really important things to have working properly in a house, huh? 


Yes, they are and I totally took them for granted before they were lacking in our new house. But well, we're lucky enough now in that we can decide where everything will be because all of the pipes and all have to be ... placed somewhere? It all just requires a lot of patience and that is something that my husband and I seem to be running low on. 


I'm kind of thinking of suggesting an anniversary get away for a weekend (our anniversary is the weekend after Valentine's Day). But then, we wouldn't be here to work on the house so it's quite a dilemma. Any suggestions? Go somewhere for a night or work on the house?

Valentine's Day Activities: Number Cards

With Valentine's Day approaching, Mr. Toddler and have definitely been using this time to practice counting. He's actually quite intrigued by hearts - probably a result of us spending so much time working on shapes while our winter shelves were out!

February Munchkin Meals: Healthy Toddler Meal and Snack Ideas

One of the reasons that I started blogging was to share healthy recipes for kids (starting with baby led weaning and evolving to toddler meals as my son has grown). 

That's also one area of this blog that I haven't been giving quite as much attention to lately. Well, today, it's time for Brittany's monthly Munchkin Meals link up over at A Healthy Slice of Life


I'm giving you guys a look into the types of foods Mr. Toddler has been loving lately! The types of meals that have made my life way easier, and most importantly, the types of meals that leave my heart content knowing that I'm doing my best to provide a varied and healthy variety of foods for my kiddo! That being said, not every meal is loaded with 200 vegetables, although I do try!

What I Wish I Ate Wednesday

So we're all ill at my house. Fever, sore throat, coughing and all sorts of icky symptoms that we had been lucky enough to avoid this past season until the last week. As far as food goes, it means that I have been unwilling to cook. Yep, no cooking. Instead, it's takeaway and freezer meals for this mama and some much needed rest.

We actually didn't really work on new toddler activities, and my kid finally got to watch cartoons all day. Oops. I'm betting that once things are back to normal with all of us, he's going to be a bit upset that the TV (netflix) watching in mama and daddy's bed is not going to be a permanent thing. Oops again. 

Because of the above, I'm sharing what I wish I would have eaten on Monday instead of what I did eat (tea, tea, and more tea).

Mr. Toddler has been working very hard to learn his colours lately! We've had loads of fun with our penguin printables, but now with Valentine's Day approaching, I thought it would a great opportunity to practice some more colours! 

I made a simple heart gradient printable for Mr. Toddler to practice his colours in a slightly more difficult way!

Sausages in a mushroom sauce

I don't know about you guys, but when it comes to breakfast time lately, I have been so lazy, but oh so seriously hungry. 

We've been putting in loads of extra hours at the house trying to get everything livable and finally be able to move in, and that extra physical work has resulted in me becoming some sort of starving monster all. the. time. 


But cooking breakfast? I need it to be easy or I will simply enjoy my black coffee without anything else to accompany it. The result is that I'm hungry, cranky, and tired. 'Cuz food is important and all. See: yummy food!

My relatively new desire to enjoy breakfast has actually been one of the most drastic changes in my diet and lifestyle since starting paleo. Until then, I usually opted out simply because of my lack of motivation to cook in the morning. 

I've also learned to love savory breakfasts! Here's the thing with them - I can revamp a simple dish like these delicious sausages in a mushroom sauce with fresh herbs, and turn the leftovers into a breakfast all within the span of 5 minutes. 


While a bit longer than the 2 minutes that microwaved oatmeal takes, these definitely keep me fuller longer and are filled with amazing flavours! 


Fresh herbs? Plus onion? Plus mushrooms? Yep! All of the ingredients necessary for an amazing bit of oompth in your breakfast, lunch, dinner, or for whenever you prefer to eat something savory!
