Free Spring Cutting Practice

Today, I am so excited to share a very simple printable and work with you. Lately, Mr. Toddler has been so excited about using scissors, which means that I was absolutely obligated to share with you a simple spring themed cutting practice printable! This printable is actually extra special to me. It's the first printable that I have made - the first work that I have presented to Mr. Toddler since my accident. 

Not only has it been an unbelievable emotional process to be away in rehabilitation while Mr. Toddler remains in the care of other loving family members, getting re-focused on our Montessori style tot activities has been a whole different struggle for me. Our activities were definitely a sort of bonding point for Mr. Toddler and I and he asks for new works every time we call or he comes to visit me.

This particular printable marks the return of me to 'me'. I am feeling more like myself again, which means that I am extremely anxious and excited to get back to thinking up fun and educational works for Mr. Toddler. He's been ready for it, too! 

I hope you and your little ones enjoy this printable as much as I enjoyed putting it together and Mr. Toddler enjoyed working on it!

Calming chamomile play dough and invitation to explore spring

Here is another post I have been 'hoarding' for a little while. It's still from pre-accident, but as I was going through the photos for this post, I realised that this type of activity that even with my current mobility, Mr. Toddler and I can still enjoy together! So today, you will be bombarded with photographs of a fun, calming, and of course educational invitation to play dough that I set up for Mr. Toddler!

Easy sweet potato and chicken soup

I've kind of been a bad food blogger. I went through my files of edited, finished photos recently and realised I have a stockpile of food photographs that need blog posts written for them. One of the recipes I am so excited to share is one that I created with my sweet grandmother when she and my grandfather were visiting in January. 

And yes, I do have more than two months worth of recipes to share. I'm working on it and you can be sure to expect tons more amazing, delicious, toddler (and grandparent!) approved recipes coming here soon! 

Today, I'm sharing how my grandmother and I made this:

I am warning you, if you choose to make this recipe, your house will smell incredible and you may be overcome with hunger. Don't worry, this incredibly easy chicken soup will warm you up!

And just when I thought that this soup could not get any tastier, fresher, and just plain ole more delicious, my lovely grandmother suggested: add some fresh herbs.

BAM! More deliciousness! I mean come on, we all know that our grannies can cook. At least, every Russian grandma I have ever met can most definitely cook! Whenever my dear Babushka suggests something in the kitchen, I immediately perform my grand-daughterly duty and try it. My husband always thanks me.  

And if you like some heat, then you should definitely add a dollop of my grandmother's Russian hot sauce recipe

Easy Healthy Recipes: 

Chicken and Sweet Potato Soup

Ingredients


  • 1 tablespoon coconut oil
  • 2 small yellow onions (1 medium)
  • 2 carrots (roughly chopped) 
  • 1 stalk celery (roughly chopped) 
  • 1 small sweet potato (roughly chopped) 
  • 3 chicken breasts (previously cooked & shredded, or cut into very small pieces) 
  • 1.5 tablespoons of my poultry seasoning
  • Juice of half a lemon
  • 1/2 liter water or approximately 2 cups of stock or water
  • Optional: Serve with fresh cilantro and green onion chopped on top

Instructions


  •  In a large pot, heat coconut oil on medium heat
  • Once the oil has melted, add onion 
  • Pan fry the onion until it is translucent 
  • Add all vegetables 
  • Pan fry for 5 minutes 
  • Add all of the remaining ingredients 
  • Bring to a boil
  • After the soup has boiled, turn down the heat to a simmer 
  • Simmer for approximately 15-20 minutes. You can cook this soup for as long as you like. It will be ready once the vegetables (and chicken if using raw), are cooked to your preference. My family prefers that our veggies still have a bit of crunch so we do not cook it for very long. 
  • Serve with fresh herbs, hot sauce, or eat it as is!
